Homemade Matzo Balls
1 cup matzo meal
1/2 cup seltzer
1/3 cup oil
4 eggs, beaten
generous pinch of salt
pepper to taste
1. Mix ingredients together in a large bowl. Refrigerate for 1 – 2 hours.
2. Put an 8 quart pot of water up to boil.
3. Meanwhile, wet the palms of your hands with oil. Take some of the matzo meal mixture the size of a walnut, and roll it between your palms. Make sure to re-oil your palms if matzo balls stick to your hands.
3. Drop the matzo balls into the pot when the water is boiling rapidly.
4. Cook for 20 minutes. The matzo balls will expand. Push them down after 10 minutes to be sure that both sides cook. Strain out the cooked matzo balls and add to your chicken soup.
Makes 15 matzo balls.
