Health Salad

1 head cabbage, finely sliced
2 cucumbers, sliced (with skin left on)
1 red pepper, cored and diced
1 green pepper, cored and diced
2 carrots, peeled and sliced
4 stalks of celery, sliced
1 onion, sliced into crescents

Dressing/Marinade:

3/4 cup vinegar
1/2 cup water
3/4 cup vegetable oil
3/4 cup sugar (or sugar substitute)
1 1/2 tspn. salt
1 teaspoon garlic powder (optional)

1. Mix together all the prepared vegetables in a large bowl.
2. Make the dressing, pour over the vegetables and let marinate.
