Sweet Potato Pie
2 9″ prepared graham cracker crusts
6 medium sweet potatoes boiled and mashed
1 cup brown sugar
1 cup pareve creamer
1 teaspoon cinnamon
3 eggs
Mix together all the ingredients in a large mixing bowl. Pour into the prepared pie crusts and bake at 180 degrees C or 350 degrees F for 1 hour. Let cool to set.
Makes two 9″ sweet potato pies.
