Tomato, Avocado and Hearts of Palm Salad
2 tomatoes, cubed
2 avocados, cubed
1 can sliced hearts of palm, drained
2 tablespoons mayonnaise
2 tablespoons lemon juice
2 tablespoons water
1 teaspoon salt
1/2 teaspoon coarsely ground pepper
1. Mix together the tomatoes, avocado and hearts of palm in a bowl.
2. Make a dressing from the remaining ingredients.
3. Mix dressing well, add to vegetable and toss gently.

I loved this recipe. It is easy to make and is delicious.
