Festive Pineapple, Onion and Pepper Chicken1 red pepper, cut into strips
1 yellow pepper, cut into strips
1 green pepper, cut into strips
1 large onion, cut into crescents
1 chicken, cut into eighths
1/2 cup brown sugar
4 tablespoons soy sauce
1 medium can pineapple chunks
1/4 cup cashew nuts, checked

1. Arrange the peppers and onion on the bottom of a baking pan.
2. Place chicken pieces on top of the vegetables.
3. Sprinkle with brown sugar, soy sauce and pineapple (with its juice) on top of the chicken.
4. Bake covered for one hour at 350 degrees F or 180 degrees C.
5. Uncover, add the cashew nuts and continue baking for 1/2 hour to brown.

Serves 6.
