Honey-Soy Chicken Salad
Chicken:
4 chicken cutlets
Marinade:
1/4 cup honey
1/4 cup ketchup
1 Tablespoon soy sauce
1 teaspoon garlic powder
Salad Ingredients:
1 head romaine lettuce, washed and cut
1 carrot, peeled and shredded
1 cup shredded purple cabbage
1/2 cup craisins
1/2 cup slivered almonds
2 cucumbers, washed and cut on diagonal
Dressing:
1/2 cup sesame oil
1/2 cup rice vinegar
1/4 cup soy sauce
1/4 cup honey
1. Mix together marinade ingredients.
2. Marinade chicken cutlets for 20 minutes.
3. Sautee marinated cutlets on medium flame for 4
minutes on each side.
4. In a serving bowl make a bed of the sliced lettuce.
Sprinkle with shredded carrots and purple cabbage.
5. Slice the cooled cutlets and add to the salad. Top
with craisins and toasted almonds.
6. Mix the salad dressing ingredients and add to salad.
7. Decorate the outside rim of the salad bowl with
washed cucumbers cut on the diagonal.
Serves 4.
